Ingredients
Romain Lettuce
Pickled Onions
1 Cucumber
Cherry Tomatos
1/2 pound chicken tender loins
1 Medium Bell Pepper
1 Avocado
Directions
Cook chicken tenderloins at 425 for 15 minutes (or until cooked through).
Tear lettuce into bite sized pieces and place in two sizable bowls.
Chop bell pepper, cucumber, cherry tomatoes and place into bowls.
Place pickled onions into bowls.
Slice avocado and put 1/2 into each bowl.
Chef Notes
Try to use organic, fresh ingredients when possible. Season the chicken tenderloins with your favorite seasoning or you can use salt & pepper. Make sure the avocado is ripe enough to slice.
